Ingredients
- 3 tablespoons pumpkin purée
- 1 tablespoon coconut flour
- 1 tablespoon ground almonds
- 1/2 tablespoon ground flaxseed
- 1/2 tablespoon chia seeds
- 1/4 teaspoon pumpkin pie mix (I used Steenbergs one but you could use any one you have or you mix cinnamon, ginger and nutmeg to get a similar flavour)
- 1/4 teaspoon vanilla extract
- 150ml milk of your choice
Toppings
- Mix of toasted nuts & seeds – the toasting bit is game changing in terms of flavour for this recipe – I used a mix of pumpkin seeds, pecans and pistachios
- 1 teaspoon almond butter
- Spoonful of yogurt
- Maple syrup to taste
You could also add seasonal fruit if you wish
Method
Add all the porridge ingredients to a saucepan and heat on low to medium heat until it is warm to your preference. Should be between 5-8 minutes.
Pour into bowl and add toppings.
