Pumpkin pie porridge

Ingredients

  • 3 tablespoons pumpkin purée
  • 1 tablespoon coconut flour
  • 1 tablespoon ground almonds
  • 1/2 tablespoon ground flaxseed
  • 1/2 tablespoon chia seeds
  • 1/4 teaspoon pumpkin pie mix (I used Steenbergs one but you could use any one you have or you mix cinnamon, ginger and nutmeg to get a similar flavour)
  • 1/4 teaspoon vanilla extract
  • 150ml milk of your choice

Toppings

  • Mix of toasted nuts & seeds – the toasting bit is game changing in terms of flavour for this recipe – I used a mix of pumpkin seeds, pecans and pistachios
  • 1 teaspoon almond butter
  • Spoonful of yogurt
  • Maple syrup to taste

You could also add seasonal fruit if you wish

 

Method

Add all the porridge ingredients to a saucepan and heat on low to medium heat until it is warm to your preference. Should be between 5-8 minutes.

Pour into bowl and add toppings.
