Roast carrot & red lentil burgers

Serves 4

Ingredients

  • 400g carrots washed but not peeled cut into 1-2 inch chunks
  • 2 leeks, peeled and cut into 1 inch slices
  • 2 tablespoons olive oil
  • 80g cooked red lentils
  • Sea salt
  • Black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chilli flakes
  • 80g panko breadcrumbs plus another couple tablespoons for rolling the patties
  • Juice of one fresh lemon
  • 1 tablespoon almond butter
  • 4 x sourdough buns (can sub for other buns)

For the sweet potato fries

  • 2-3 large sweet potatoes peeled and cut into thin batons like fries
  • 2 tablespoons olive oil
  • Few generous pinches of sea salt

Your choice of toppings…

I reckon this goes really well with some crispy kale and  guacamole!

Method

Heat the oven to 200C.

Bring a large saucepan of water to the boil and add the carrots. Cook for 5 mins.  Drain and allow the steam to dry. Lay on a baking tray lined with parchment paper. Add the leeks and mix around evenly. Drizzle with the oil and season. Roast for 35-40 mins.

Cook the lentils according to the packet instructions and place to one side once cooked.

Add the cooked carrots & leeks to a food processor and blitz to break into much smaller pieces (around 1-2 mins). Add in lentils and blitz again to mx thoroughly. Then add the breadcrumbs, all of the spices, lemon juice and almond butter and blitz to get your dough. Divide the mixture into 4 and shape into round patties around 3 inches thick. Put in the fridge and allow to set for at least an hour.

When ready to cook heat the oven to 200C. Sprinkle the sweet potato with sea salt and drizzle with olive oil. Place on a baking tray lined with parchment paper and cook for 35 minutes tossing halfway through.

Roll the patties in the extra breadcrumbs. Heat a little oil in a pan and fry on a medium heat for 5 minutes on each side. Transfer to a baking tray lined with parchment paper and bake in the oven with the fries for their last 10 mins of cooking. Whilst this is cooking you can lightly toast the sourdough buns either on a hot pan or under the grill.

Place on the buns and your choice of toppings along with the fries.
